Brown rice does make a nice rice pudding too. For a light version one may use skim milk and egg substitute You'll be surprised how yummy this tastes! Ingredients:
1 cup brown rice rinsed |
1 qt milk |
1 cup evaporated milk |
1 tsp vanilla |
1 tsp cinnamon |
1 egg |
1/3 cup honey |
2 to 3 tbs rum or kahula |
1/4 cup slivered almonds toasted |
1 cup raisins |
1/4 tsp nutmeg |
Directions:
1. . Combine rice, milks, vanilla and cinnamon in a saucepan. 2. Bring to boil and reduce heat to simmer and cook uncovered 1 hour, stir occasionally. 3. In a bowl mix honey and liquor and egg. 4. Add to rice and then add raisins and almonds. 5. Cook and stir another 20 minutes or till thickened. T 6. op with nutmeg. Serve warm or chilled . 7. Serves 6 to 8. |
