Ingredients:
2 cups fat-free, less-sodium chicken broth |
1 cup uncooked brown rice |
1/2 cup shredded carrot |
1/2 cup finely chopped celery |
1/2 teaspoon salt |
1/4 teaspoon ground red pepper |
1 garlic clove, minced |
1/4 cup thinly sliced green onions |
3 tablespoons slivered almonds, toasted |
Directions:
1. Bring broth to a boil in a heavy saucepan; stir in rice and next 5 ingredients. 2. Cover, reduce heat, and simmer 50 to 55 minutes or until rice is tender and liquid is absorbed. Stir in green onions and almonds. 3. Tip: Brown rice has twice the fiber of white rice. Increasing the fiber in your diet may help control blood sugar. |
