1 tbsp olive oil |
1/2 onion, chopped |
1/2 red bell pepper, chopped |
2 cups water |
1 cup uncooked brown rice |
1/4 cup finely chopped parsley |
1 salt |
1 ground pepper |
Directions:
1. Heat oil in a medium saucepan. 2. Add onion and bell pepper; cook 3 monutes. 3. Add water and rice; bring to a boil. 4. Reduce heat; cover and simmer 50 minutes, or until rice is tender and liquid is absorbed. 5. Fluff with a fork; stir in parsley. 6. Season with salt and pepper if desired. |
