We were looking for an alternative to the boxed rice side dishes. Through trial and error, we came up with this. Ingredients:
1 1/4 cups brown rice |
2 tablespoons butter |
2 garlic cloves, crushed |
3 cups chicken broth, divided |
1 teaspoon dried onion |
1 tablespoon dried sweet pepper |
1/2 teaspoon cumin |
1 tablespoon chicken bouillon |
Directions:
1. Melt butter in a skillet, add rice and crushed garlic and saute until golden brown. Add 1 cup of chicken broth and bring to a boil. 2. Combine 2 cups broth, bouillon, sweet peppers, cumin in a sauce pan. Add rice,bring to a boil, reduce heat to simmer,cover an cook for 50 to 55 minutes 3. Remove from heat, let stand 5 mins and fluff. |
