Brown Rice Mushroom Pilaf |

A nice brown rice recipe. This came from the Whole Grains Council. Ingredients:
1/2 large onion, chopped |
1 cup sliced fresh mushrooms |
1 tablespoon olive oil |
1 cup brown rice |
2 cups chicken broth |
salt and pepper |
Directions:
1. Brown chopped onion and sliced mushrooms in a large saucepan with the olive oil, about 5 minutes. 2. Add brown rice and stir to coat in oil. 3. Add chicken broth. 4. Bring to a boil, then simmer for about 45 minutes or until all liquid is absorbed. |
