Lala came home with this recipe recently and I looked at her like she was nuts. I thought to myself that is one weird combination of stuff . I was hesitant to try it, so she made it today and brought me some. WOW! Next time I won't doubt her. It was REALLY good.
Ingredients:
3 cups cooked brown rice
8 ounces pineapple tidbits, drained
1 pear, chopped
1/4 cup golden raisin
1/2 cup pecans, chopped
1 cup vanilla yogurt
1 tablespoon lemon juice
2 tablespoons honey
1 teaspoon poppy seed
Directions:
1. Mix together the rice, pineapple, pear, raisins and pecans.
2. In separate small bowl, prepare dressing and mix well.
3. Stir the dressing into the salad mixture and refrigerate for one hour before serving.
