This noodle salad is super healthy and easy to make. It is also vegan and free of common food allergens, like gluten, dairy, eggs, and nuts. Basically, it is so good that it is sure to make all who eat it feel awesome!!! Brands I use are: Tinkyada pasta, Lindsay Naturals Olives, Field Day Organic Salsa, and Simply Organic Onion Powder.
Ingredients:
1 (12 ounce) bag brown rice pasta
1 (6 ounce) can green olives
1/3 cup mild salsa
1 red bell pepper
2 medium tomatoes
1/2 tablespoon avocado oil
1 teaspoon onion powder
sea salt
Directions:
1. Cook pasta for 15 minutes. Drain and rinse with cold water. Chop tomatoes and red bell pepper. Slice olives. Add all vegetables, salsa, oil, and onion powder to pasta and toss. Sea salt to taste. Enjoy!
