Mish mash with cauliflower sauce Ingredients:
1 1/2 cup brown rice |
425 g black beans 104221 |
425 g kidney beans 104228 |
4 cups spinach |
75 g soy cheese 57736 |
1/4 head cauliflower |
1/2 zucchini, yellow |
2 1/2 cloves garlic |
175 g light silken firm tofu 16164 |
1 tbsp flour |
7 g salted margarine 120800 |
1 tsp salt |
1 tsp pepper |
1 1/2 tbsp pine nuts |
Directions:
1. All but first five comprise sauce. Steam cauliflower then use food processor to add all together, adding water for the right consistency and salt and pepper to taste. 2. Cook rice. 3. Mix rice, sauce, beans and spinach together in a casserole dish. 4. Top with grated soy cheese. 5. Cook for 40 minutes at 350F |
