Brown Rice and Vegetables

Toasting the rice beforehand lends a somewhat nutty flavor to the dish
Ingredients:
1 1/2 cups brown rice
3 cups vegetable broth
1/2 cup chopped celery
1/2 cup chopped onion
1/2 cup chopped carrot
1/2-1 tablespoon olive oil
Directions:
1. Heat olive oil, onions and celery in a saucepan large enough to hold the rice over medium heat.
2. When the vegetables are tender and translucent, add the rice. Stir frequently until the rice is lightly toasted.
3. Add the vegetable broth and set the heat to low. Simmer until liquid is absorbed. Approximately 30 minutes.
