Ingredients:
1 1/2 cups chicken broth, may substitute vegetable |
1 1/2 cups tomato, diced |
1 cup lentils |
1/2 cup brown rice |
3/4 cup chopped onion |
1 teaspoon italian seasoning |
1 clove garlic, minced |
1 cup cheddar cheese, grated |
Directions:
1. Preheat the oven to 300 degrees. 2. Mix all ingredients except the cheese in a baking dish (11 x 7 works or 2.5 quart) 3. Cover with foil and bake for 1 hour 10 minutes. 4. Then remove the foil, add the cheese, and bake for an additional 20 minutes. |
