This recipe was adapted from Alton Brown's White Rice recipe. I have altered to suit my tastes. The site doesn't recognize broth packets, which is what I use for cooking. For this recipe, I use one no sodium packet of beef broth and seasoning mix and 1 1/2 cups of boiling water. Ingredients:
3 garlic cloves, finely chopped |
2 small shallots or 2 small yellow onions, finely chopped |
1 cup brown rice |
2 tablespoons light margarine |
1 1/2 cups of boiling chicken broth (use a low sodium or no sodium brand if possible) |
1/2 teaspoon mrs. dash table blend seasoning |
Directions:
1. In a small pan, boil broth or water. 2. Meanwhile, in a sauce pot with a fitted lid, melt margarine over medium heat. Add the garlic and shallot or onion and saute for 2-3 minutes. Add the rice and stir to toast alittle. Stir in the boiling liquid you have chosen. Add the seasoning and bay leave. Stir to combine, raise heat to high and bring to a boil. Reduce the heat to low and cook rice for 45 minutes to 1 hour OR until all liquid has evaporated. Remove the pan from heat and let sit for 10 minutes. Flake with a fork. |
