Smooth and creamy lentil soup. Ingredients:
1 cup brown lentils, washed |
1 large onion, diced |
salt |
1/2 teaspoon cumin |
3 tablespoons oil |
6 cups water |
Directions:
1. in pot sautee onion in oil. 2. add water and salt cover bring to a boil. 3. add lentils cover lower heat and allow to cook until lentils split about 15 -20Min's. 4. when the lentils split or become soft with a hand blender puree the lentils with the cumin until soup is creamy. 5. return to heat for another 15 Min's. 6. serve with toasted pita bread and lemon juice. |
