Brown Fried Rice Thats Oh So Nice |

This dish is a healthy twist on traditional Fried Rice. It also combines almost all the food groups, which is why I don't consider this as just a side dish. It packs a lot of flavor for being 'just' fried rice! Ingredients:
1.5 cups brown rice |
2 jumbo eggs |
1 large green onion, chopped |
1 block firm tofu |
4 apple-chicken sausage links (aidell's brand) |
3/4 cup soy sauce |
1/4 cup olive oil |
Directions:
1. *NOTE RICE SHOULD BE COOKED BEFORE INITIAL PREP, PREFERABLY HAVING BEEN IN A FREEZER TO MAKE RICE FIRM* 2. Take two jumbo eggs, scramble then cook. Set aside. 3. Chop a large stalk of green onions. Set aside. 4. Cut firm tofu block into small cubes. Set aside. 5. Take Aidell's Apple-Chicken Sausage and cut into small pieces. Set aside. 6. Heat large skillet (preferably Wok skillet), and add 1/4 cup of olive oil. 7. Add green onions to skillet. 8. Stir tofu into skillet. 9. Stir Rice into skillet. 10. Stir scrambled eggs into skillet. 11. Stir in Apple-Chicken Sausage. 12. Slowly pour in 3/4 cup of soy sauce. 13. Stir all ingredients until complete. 14. Serve warm. |
