I made these for the first time tonight. They are so good. I didnt have enough powder sugar to make icing for all the cookies, and they are even good without the icing. Ingredients:
2 cups butter |
2 cups brown sugar |
2 eggs |
2 teaspoons vanilla |
1 teaspoon baking soda |
1/2 teaspoon baking powder |
1/2 teaspoon salt |
3 cups flour |
2/3 cup pecans |
2 teaspoons vanilla |
3 1/2 cups powdered sugar |
1/2 cup hot water |
1/2 cup reserved brown butter |
Directions:
1. Pre heat oven to 375. 2. Heat butter in skillet until brown. 3. about 5-7 min. 4. Watch closely and do not burn. 5. COOL. 6. Reserve 1/2 c. 7. for icing. 8. Add brown sugar and 1 1/2 c. 9. brown butter. 10. Beat until cool. 11. Add eggs, vanilla, soda, baking powder, and salt. 12. Beat well. 13. Add flour and pecans. 14. Drop by tablespoons on cookie sheet. 15. Cool cookies and then ice. |
