Brown Bread--With Leftover Crumbs of Any Kind |

This is a great recipe to use up leftover cake, bread, cookies, doughnuts, etc. When my kids were little I always seemed to have leftover stuff that got thrown away. When I found this recipe I would use it and make Brown Bread. You can put scraps in a baggie in the freezer and when you have enough, make this recipe. The only cookie or doughnut I didn't use was a chocolate one, but probably it would come out fine. Ingredients:
2 cups breadcrumbs or 2 cups cake crumbs or 2 cups cookie crumbs or 2 cups crumbs from doughnuts |
1 cup buttermilk |
2 teaspoons baking soda |
1 cup hot water |
3/4 cup molasses |
1 cup flour |
1 cup cornmeal |
1 teaspoon salt |
3/4 cup floured raisins |
Directions:
1. Let sit overnight-the leftover goodies to make the crumbs and the buttermilk, till the mixture is soft; put through a seive. 2. Dissolve the baking soda in the hot water and add the molasses; mix together just to blend. 3. Add the rest of the ingredients and mix well. 4. If more liquid is needed-used hot water a little at a time. 5. Put in two greased 1-pound coffee cans and steam for 3 hours. |
