Husband and I have been brown baggin' it for years. Chicken salad sandwich is a favorite. You can pack lettuce leaves wrapped in foil and add just before eating. Ingredients:
3 cups diced cooked chicken |
1 celery, finely chopped |
1/2 red bell pepper, finely chopped |
4 green onions, including some tender green tops, finely chopped |
1/2 cup mayonnaise, plus extra for spreading on the bread |
1/4 teaspoon salt |
fresh ground black pepper |
8 slices pumpernickel bread (or other brown bread) |
Directions:
1. In a bowl, mix together all the ingredients except the bread; taste and adjust with salt and pepper. 2. *Optional-spread mayonnaise on all of the bread (I don't do this b/c I don't like a lot of mayo). 3. Divide mixture evenly between 4 slices; top with the remaining bread. 4. Eat whole or cut in half and serve. |
