Brough House Oatmeal Raisin Muffins |

Very moist and delicious! Found the original of this in a Bed and Breakfast cookbook. My family loves them. Ingredients:
2 cups quick oats |
1 cup whole wheat flour |
3/4 cup unbleached white flour |
1/4 cup wheat germ |
1/2 cup packed brown sugar |
2 tablespoons baking powder |
2 teaspoons salt |
1 teaspoon cinnamon |
1 teaspoon nutmeg |
2 eggs |
1 1/2 cups low-fat milk |
2/3 cup olive oil |
1/3 cup applesauce |
1 cup raisins |
Directions:
1. Combine dry ingredients (except raisins) in mixing bowl. 2. Whisk together wet ingredients, and stir gently into dry. Stir in raisins. 3. Spray muffin cups and fill 3/4 full with batter. Let sit for 15 minutes. 4. Bake 20 minutes or until golden brown and firm. Remove to rack to cool slightly, then serve warm with a drizzle of honey. |
