Broken Shrimp Jambalaya

This is one of my adopted recipes. I have not made it yet, so it has not been revised.
Ingredients:
1 cup peanut oil
4 onions, chopped
5 cloves garlic
black pepper
2 bunches shallots
1 bell pepper, chopped
white pepper
1/4 lb smoked sausage
2 teaspoons paprika
salt
1 red pepper
1 1/2 lbs shrimp, broken (cooked)
3 cups rice
5 cups water
Directions:
1. Heat oil, add onions, garlic, shallots, bell pepper, smoked sausage, paprika, salt, and peppers and saute well.
2. Add shrimp pieces, rice and water.
3. Bring to boil, cover, and over very low heat, steam for 20 to 25 minutes.
4. Stir with fork and replace cover.
