Broken Noodle With Tomato Sauce and Ricotta |

Easy one-pot main course; serve with a tossed salad. From Martha Stewart's *Everyday Food.* Ingredients:
4 cups marinara sauce (home-made or store-bought) |
1 (9 ounce) package pappardelle pasta (wide pasta) |
coarse salt, to taste |
ground pepper, to taste |
1/2 cup part-skim ricotta cheese |
1/2 cup basil leaves (fresh, torn) |
Directions:
1. In a large saucepan, bring sauce and 2 cups of water to a boil; reduce to a simmer. Add noodles, and simmer, stirring frequently, until tender, 6-8 minutes. Season with salt. Serve with a dollop of ricotta, basil, salt and pepper. |
