When the cupboard is almost bare, and you're even out of eggs and milk, you're almost certain to have this recipe's basic ingredients on hand. No syrup needed!
Ingredients:
1 cup flour (i prefer freshly ground whole grain flour for flavor--white works just as well)
1 1/2 teaspoons baking powder
1/4-3/8 teaspoon salt
1 teaspoon cinnamon
3 tablespoons sugar
1 cup water
2 tablespoons cooking oil
Directions:
1. Blend first five ingredients
2. Add water and oil and stir until well blended.
3. Cook over medium heat in a skillet until the bubbles go flat and edges of the tops look dull, then flip and cook until they stop steaming.
4. If you don't have syrup, you can increase the sugar, and if you don't have cinnamon, you can omit it.
