1/4 cup chopped fresh cilantro |
1 tablespoon paprika |
1 tablespoon minced peeled fresh ginger |
1 tablespoon fresh lemon juice |
1 1/2 teaspoons curry powder |
1/2 teaspoon ground cumin |
1/4 teaspoon ground red pepper |
1 garlic clove, minced |
1 1/2 pounds skinless, boneless chicken breasts, cut into 1-inch pieces |
cooking spray |
Directions:
1. Combine first 9 ingredients in a bowl. Stir in chicken; cover and marinate in refrigerator 30 minutes. 2. Preheat broiler. 3. Remove chicken from marinade, discarding marinade.
