Ingredients:
2 (1-pound) dressed spanish mackerel |
1 tablespoon olive oil |
1/2 teaspoon salt |
1/4 teaspoon pepper |
lemon slices |
maître d'hôtel butter |
Directions:
1. Rinse fish thoroughly in cold water; pat dry. Rub fish inside and out with olive oil, salt, and pepper. 2. Place fish on lightly greased rack in a broiler pan. Broil 6 to 7 inches from heating element 5 minutes on each side or until fish flakes easily when tested with a fork. 3. Transfer fish to a warm serving platter; garnish with lemon slices. Serve immediately with Maître d'hôtel Butter. |
