Broiled Salmon with Citrus Salsa |

Jarred citrus salad, available in the produce section of the supermarket, can be substituted for the orange and grapefruit sections. Ingredients:
4 (6-ounce) salmon fillets |
cooking spray |
1 teaspoon olive oil |
1/2 teaspoon salt |
1/8 teaspoon black pepper |
1 cup coarsely chopped orange sections (about 1 large) |
1 cup coarsely chopped grapefruit sections (about 1 large) |
2 tablespoons minced fresh cilantro |
1/2 cup chopped red bell pepper |
1/4 cup finely chopped red onion |
1 jalapeƱo pepper, seeded and finely chopped |
1 tablespoon sugar |
Directions:
1. Preheat broiler. 2. Place fillets on rack of a broiler pan coated with cooking spray. Brush fillets with olive oil; sprinkle with salt and pepper. Broil 10 to 12 minutes or until fish flakes easily when tested with a fork. 3. While fillets cook, combine orange sections and remaining ingredients in a bowl. Serve with fillets. |
