Broiled Lamb Chops with Mango-Mint Salsa |

Prep: 9 minutes; Cook: 8 minutes. Ingredients:
1 cup diced peeled ripe mango (about 2) |
1 large shallot, peeled and minced |
2 tablespoons pine nuts, toasted |
2 tablespoons chopped fresh mint |
1 tablespoon honey |
1 tablespoon rice wine vinegar |
4 (3-ounce) lamb rib chops, trimmed (about 1 inch thick) |
2 garlic cloves, halved |
1/4 teaspoon salt |
1/4 teaspoon freshly ground black pepper |
cooking spray |
Directions:
1. Preheat broiler. 2. Combine first 6 ingredients in a medium bowl. Cover and chill. 3. Rub chops with garlic, salt, and pepper. Place chops on a broiler pan coated with cooking spray. Broil 4 to 5 minutes on each side or until desired degree of doneness. Serve with salsa. |
