Broiled Lamb Chops with Mango-Mint Salsa

Ingredients:
1 cup diced peeled ripe mango (about 2)
1 large shallot, peeled and minced
2 tablespoons pine nuts, toasted
2 tablespoons chopped fresh mint
1 tablespoon honey
1 tablespoon rice wine vinegar
4 (3-ounce) lamb rib chops, trimmed (about 1 inch thick)
2 garlic cloves, halved
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
cooking spray
Directions:
1. Preheat broiler.
2. Combine first 6 ingredients in a medium bowl. Cover and chill.
3. Rub chops with garlic, salt, and pepper. Place chops on a broiler pan coated with cooking spray. Broil 4 to 5 minutes on each side or until desired degree of doneness. Serve with salsa.
