Flounder, with its firm, white, finely textured flesh, may be cooked many ways. The tangy orange sauce gives zest to this mild-flavored fish. Adapted from TRY-FOODS INTERNATIONAL Apopka, FL. flounder fillets, butter or margarine, seasoned salt, orange marmalade, fresh orange juice, grated fresh ginger root, hot pepper sauce, navel oranges cvt Ingredients:
16 oz cooked flounder fillets, net from 24 oz raw, thawed, if frozen |
1 tbsp. butter or margarine, melted |
1/4 tsp. (seasoned) salt |
1 cup orange marmalade |
1/4 cup fresh orange juice |
2 tsp. grated fresh ginger root |
1/4 tsp. hot pepper sauce |
2 navel oranges, sectioned |
Directions:
1. Preheat broiler. Coat broiler rack with nonstick cooking spray. 2. Place fillets on rack. Brush with melted butter and sprinkle with seasoned salt. Broil 4 inches from heat until fish flakes with a fork, about 8 minutes. 3. Meanwhile, in saucepan combine marmalade, orange juice, ginger, and hot pepper sauce. Heat while stirring. Serve over flounder. 4. Garnish with orange sections and chives, if desired. |
