Broiled Fish Fillets Piquante |

A old southern recipe my Gran picked up on a trip to Alabama back in the 70's that starts with frozen perch-just thaw, season and broil. Ingredients:
2 tablespoons butter, melted |
1 tablespoon lemon juice |
1 teaspoon minced onion |
1/2 teaspoon salt |
1/4 teaspoon white pepper |
1/4 teaspoon dried marjoram |
1/8 teaspoon ground savory |
1 lb frozen perch fillet, thawed |
1 tablespoon minced fresh parsley |
Directions:
1. Combine butter, lemon juice, minced onion, salt, pepper, marjoram, and savory; stir well. Place fish in a lightly greased 11 x 7 x 2 inch shallow baking pan. Spoon half of butter mixture over fish. Broil 5-6 inches from heat 5 minute or till fish flakes easily with a fork; transfer to serving platter. Pour remaining butter mixture over fish; sprinkle with parsley. Enjoy! |
