Broiled Feta and Sausage Tomatoes |

Another good sounding dish from the DeenBros Good Cooking magazine. (Cooking time for the tomatoes doesn't include cooking the sausage). Ingredients:
3 large tomatoes, halved crosswise |
1/4 teaspoon salt |
1/4 teaspoon black pepper |
8 ounces italian sausage, casings removed, cooked and crumbled |
1 cup panko breadcrumbs |
1 (4 ounce) container crumbled feta cheese |
2 tablespoons chopped fresh oregano |
1 tablespoon olive oil |
Directions:
1. Preheat oven to broil. Line a rimmed baking sheet with aluminum foil. Place tomatoes, cut sides up on baking sheet and sprinkle with salt and pepper. 2. In a small bowl, combine sausage, panko, feta cheese, and oregano; stir in olive oil. Spoon sausage mixture evenly on top of each tomato half. Broil tomatoes 5 inches from heat, for 6 minutes or until lightly browned. |
