My sweet Aunt Millie (everybody needs an Aunt Millie!) gave me this recipe way back when. It's so easy to prepare - you can do all but the last step several hours ahead. Easy party food!
Ingredients:
1/2 pound (fresh or thawed) cooked medium shrimp, chopped coarsely
1 cup mayonaisse
1/2 cup grated sharp cheddar
1/4 teaspoon garlic salt or powder, your preference
just a sprinkle of old bay seasoning, optional
about 6 hearty white bread slices, crusts removed and each slice cut into fourths (note: i've also used the small french baguette bread and left the crust on - sliced it thinly, and it is not necessary to cut the bread slices any smaller)
butter
Directions:
1. Mix together the shrimp, mayonaisse, cheddar and seasoning; set aside while you toast the bread slices.
2. Lightly butter both sides of the bread slices and lay them on a baking sheet.
3. Bake at 425 until the bottom is just barely browned a bit - WATCH THE BOTTOM, as that will brown before the top, and you don't want the bread to get too toasted.
4. Flip the bread over so the browned bottom is now face up.
5. Cover each slice with the shrimp mixture.
6. Bake for 2 more minutes, then turn the oven to Broil; broil until shrimp mixture is bubbly and hot.
7. Serve immediately.
8. NOTE: For those times you want the easiest preparation, buy a loaf of fresh or frozen garlic bread and prepare as directed, adding the shimp when it's toasted - broil until shrimp is bubbly and hot. Done!
