Broiled Cheese and Olive Sandwich |

This recipe was so different from anything I've made that I had to try it. Who knew you could make something this tasty with so few ingredients? I used less salt because the olives were salty. Recipe courtesy of The Settlement Cookbook 1965. Yum! You could vary this and add water chestnuts, tuna or chicken, etc. It's perfect by itself, but just a thought... Ingredients:
6 english muffins, split |
1 cup ripe olives, chopped |
1/2 cup green onion, slivered |
1 1/2 cups cheddar cheese, grated |
1/2 cup mayonnaise |
1/2 teaspoon salt |
1/2 teaspoon curry powder or 1/2 teaspoon chili powder |
Directions:
1. Toast muffins. 2. Combine other ingredients and spread on muffins with mixture. 3. Broil until cheese melts. |
