Ingredients:
3 tablespoons butter or margarine, melted |
2 tablespoons lemon juice |
4 (1/4-pound) cubed steaks |
1 teaspoon salt, divided |
1/2 teaspoon pepper, divided |
4 slices bacon |
4 (1/2-inch-thick) slices tomato |
fresh parsley sprigs |
Directions:
1. Combine butter and lemon juice; stir well, and set aside. 2. Sprinkle steaks with 1/2 teaspoon salt and 1/4 teaspoon pepper. Place steaks on lightly greased rack in a shallow roasting pan; brush tops with half of lemon-butter mixture. 3. Broil steaks 6 inches from heating element 5 minutes; turn steaks, and brush with remaining lemon-butter mixture. 4. Place bacon on rack with steaks; broil an additional 3 minutes. Place one tomato slice on top of each steak; sprinkle with remaining salt and pepper. Crumble bacon; place equal amounts on top of tomatoes. Broil an additional 2 minutes. 5. Transfer steaks to a warm serving platter; garnish with parsley sprigs. Serve immediately. |
