Brocoli And Bacon Baked Potato |

Allergy Friendly Recipe which eliminates some of the most common food allergens without sacrificing flavor. peanut, egg, soy, fish and shellfish FREE Ingredients:
4 medium russet potatoes, washed |
nonstick cooking spray |
kosher salt to taste |
1/2 cup nonfat plain yogurt |
1/2 cup broccoli florets, finely chopped |
2 slices turkey bacon, crisply cooked and crumbled |
20 cherry tomatoes, cut in half |
Directions:
1. Preheat oven to 375F 2. With a fork, poke 8 to 12 deep holes all over each potato so moisture can escape during cooking 3. Place potatoes on a baking sheet and coat potatoes lightly with cooking spray 4. Sprinkle with kosher salt and place baking sheet directly on rack in middle of oven 5. Bake for 1 hour or until skin feels crisp but flesh beneath feels soft 6. Remove from oven and let cool 7. Once cool to the touch cut a slit down the middle of each potato 8. Serve topped with a dollop of yogurt, some broccoli florets, crumbled bacon and halved cherry tomatoes |
