Broccolini With Pepper Dressing |

Asparagus or Broccoli can be substituted if broccolini cannot be found. Ingredients:
1/3 cup red bell pepper, finely chopped |
2 tablespoons shallots, finely chopped |
1 tablespoon sugar |
2 tablespoons rice vinegar |
1 tablespoon lime juice |
2 teaspoons fresh ginger, peeled, minced |
1 teaspoon vegetable oil |
1/2 teaspoon salt |
1/4 teaspoon crushed red pepper flakes |
1 lb broccolini, trimmed |
Directions:
1. Combine first 9 ingredients in a bowl, toss well. 2. Steam broccolini, covered for 5 minutes or until crisp tender; drain. Spoon pepper dressing over broccolini. |
