Broccoli With Truffle Oil |

Lightly steamed broccoli dressed up with a touch of truffle oil, a few shavings of parmesan and a spattering of crisp bread crumbs equals the best broccoli I've ever had. Ingredients:
2 heads broccoli, stems removed and cut into individual florets |
1/2 cup crouton (just choose your favorite brand or flavor) |
parmesan cheese, grated finely with a microplane grater |
truffle oil |
Directions:
1. In the bowl of a food processor, process the 1/2 cup croutons until fine. 2. Steam broccoli until tender crisp and bright green, about 5 minutes. 3. Place broccoli in your serving dish (I usually use a casserole dish). 4. Drizzle the broccoli lightly with truffle oil. 5. Dust the broccoli with breadcrumbs. 6. With a microplane grater, shave fine wisps of parmesan over the dish. 7. Serve immediately. |
