Broccoli With Red Onions, Blue Cheese and Mint

Ingredients:
2 large broccoli
2 large red onions
1/4 cup olive oil
6 ounces blue cheese, crumbles
2/3 cup mint leaf, coarsely chopped
coarse salt
pepper
Directions:
1. Cut broccoli into large pieces.
2. Steam broccoli until tender but still bright green, about 10-12 minutes.
3. Peel onions and cut in half through root end. Cut onion into thin slices.
4. Heat oil in large skillet. Add onions and cook until soft, and some are dark brown and crispy, about 10 minutes.
5. Put broccoli in a large bowl, add onions, cheese and mint.
6. Toss, adding salt, pepper and more olive oil if necessary.
7. Serve immediately.
