Broccoli With Homemade Lemon Crumbs |

Worthy of a special occasion, yet so easy! Ingredients:
1 bunch broccoli, cut into flowerets |
2 slices whole wheat bread |
3 tablespoons butter |
1 tablespoon lemon zest |
2 tablespoons lemon juice |
1 garlic clove, minced |
1/2 teaspoon kosher salt |
1/2 teaspoon fresh ground black pepper |
Directions:
1. Lightly toast the bread. 2. Put the bread in a food processor or blender and chop into bread crumbs. 3. Melt the butter in a small skillet. 4. Add the bread crumbs and sauté over medium heat until toasted. Add the lemon zest, lemon juice, garlic, salt and pepper. Continue cooking, stirring constantly, until dry. 5. Set crumb mixture aside to get to room temperature (This mixture can be made ahead.). 6. Steam the broccoli. 7. Top broccoli with the lemon breadcrumbs, and mix together. 8. Serve. |
