Broccoli With Garlic, Red Pepper Flakes And Parme...

More often than not broccoli is cooked to death, not so in this recipe. Steamed for a few minutes, than sauteed in a garlic flavored olive oil, it stays crisp and bright green. Adapted from Deborah Madison, it's one of my favorite ways to serve this very popular vegetable.
Ingredients:
1 lb broccoli
3 tb olive oil
2 cloves garlic, thinly slivered
1/2 ts red pepper flakes
s+p
parmesan shavings
Directions:
1. Trim broccoli into large florets with the stems attaches. Half thick stems lengthwise, so they cook evenly. Put in steaming basket and steam over boiling water for 5 min.
2. In ghe meantime warm olive oil in a large skillet and cook garlic slivers over low medium heat until pale brown. Add pepper flakes, s+p, and broccoli and saute until broccoli is heated through.
3. Put Broccoli in a serving bowl, sprinkle with parmesan and serve at once.
