Broccoli Tomato Pasta Salad |

So easy ! Toss with Italian dressing and Parmesan or feta. You may change vegetables to your preference. Ingredients:
2 c. uncooked corkscrew pasta |
2 c. fresh broccoli florets |
1 c. halved cherry tomatoes |
1/3 c. sliced pitted olives |
1/3 c. low fat italian dressing |
1/4 c. shredded/grated parmesan or crumbled feta |
Directions:
1. Cook pasta as directed on package adding the broccoli during the last few minutes of cooking time. 2. Drain and place in bowl. 3. Add remaining ingredients and toss. Taste and add salt/pepper if needed.( I sometimes add garlic powder, etc. too depending on the dressing used) 4. Refrigerate several hours or until chilled. |
