Better Homes and Gardens Ingredients:
2 (14 ounce) cans chicken broth |
1 (16 ounce) package fresh broccoli florets |
1/2 cup chopped onion (1 medium) |
2 teaspoons bottled roasted garlic |
1 cup shredded swiss cheese (4 oz.) |
1 cup half-and-half or 1 cup light cream |
1/2 cup cubed cooked ham |
Directions:
1. In a large saucepan, combine broth, broccoli, onion, and roasted garlic. 2. Bring to a boil; reduce heat, cover, and simmer about 10 minutes or until broccoli is very tender. 3. Place half of the broccoli mixture in a blender or food processor. 4. Cover and blend or process until smooth. 5. Transfer to a bowl; repeat with remaining broccoli mixture. 6. Return all of the mixture to the saucepan. 7. Bring broccoli mixture to simmering. 8. Add cheese; cook and stir until cheese melts. 9. Stir in half-and-half and ham; season to taste with salt and ground black pepper. |
