Here's a nice summer side for your bbq and grilled meats. Ingredients:
one package broccoli slaw |
half of a medium vidalia onion, chopped fine |
dried, chopped cranberries (i used almost a cup) |
half a cup of cashew pieces (try to get the lightly salted or unsalted) |
half cup of mayo |
quarter cup of vinegar (i use pear-infused or rice vinegar but anything will work) |
four tablespoons of oil |
three tablespoons of sugar |
salt and pepper (no salt needed if your cashews are salted) |
Directions:
1. Dump the broccoli slaw, the chopped onion, the cranberries and the cashews in a bowl; 2. In another bowl, make the dressing by mixing the mayo, the vinegar, and the oil until creamy; 3. Add in the sugar, salt and pepper, and mix some more; 4. Pour the dressing over the broccoli mixture and mix everything well; 5. Refrigerate before serving. |
