This is from First magazine. I wanted to save it here for later. I wonder if other veggies could be used..... Ingredients:
1 head broccoli, cut into florets |
1 cup diced yellow peppers |
1 cup halved cherry tomatoes |
1 tsp chopped garlic |
1tbs olive oil |
1/2 tsp southwest seasoning blend, like emeril's |
Directions:
1. In saucepot, bring 2 water to a boil; add broccoli. Cover; cook 5 min., or until broccoli is tender. 2. Place peppers and tomatoes in colander; pour in cooked broccoli and hot water to drain. 3. In skillet over high heat, cook garlic in olive oil 1 min. Add vegtables and seasoning blend. Cook 2 min.; arrange on serving platter. |
