Broccoli Salad with Peanut Dressing |

Very simple, Asian, and vegan as well! Ingredients:
4 1/2 cups broccoli florets |
1/2 cup chunky peanut butter |
1/2 cup olive oil |
1/4 cup rice wine vinegar |
1/2 cup orange juice |
1 teaspoon oriental chili sauce or 1 teaspoon tabasco sauce |
1/2 teaspoon salt |
1/8 teaspoon fresh ground black pepper |
Directions:
1. Blanch broccoli florets in hot salted water for about 3 minutes. 2. Refresh in a bowl of iced water and drain. 3. Whisk peanut butter with remaining ingredients in a bowl until a vinaigrette is formed. 4. Add broccoli, toss, and serve. |
