This is a great salad anytime of year. I love it most on hot summer day. The flavors are cool and crisp. Makes a great side dish but I love it as a meal. Ingredients:
1 head of broccoli (i prefer the flowerets only) |
8 slices of baon cooked and crumbled |
1 red oninon to taste |
1/2 to 1 cup of raisins, depending on your tastes |
8 oz sharp cheddar cheese cut into small cubes ( i have used shreaded also, to taste) |
1 cup of mayonnaise |
2 tablespoons of vinegar ( i have also used apple-cider vinegar) |
1/4 to 1/2 cup of sugar (depends on how sweet you like it) |
1 cup of halved cherry tomoatoes (grape tomatoes taste great too) |
Directions:
1. rinse broccoli flowerets well and then cut into bite size pieces 2. in a large bowl combine broccoli, bacon, onion, raisins, & cheese 3. in a small bowl combine remaining ingredients, stirring well 4. pour dressing over broccoli mixture and toss together 5. I prefer to chill about an hour before serving, but it is great served immediately 6. NOTE: I also like to add shreaded carrots from time to time. Nuts would be good also. |
