This is a nice sweet and savory salad. Crunchy. Great with chicken or hamburgers. The picture isn't that great but I've already done dishes!! :) Ingredients:
1 large or 2 small heads of broccoli |
1 medium red onion or 4 green onions |
1/2 red pepper |
1 cup shredded cheddar cheese |
1/2 cup raisins, cranberries, craisins or cherries |
8 slices bacon |
1 cup mayonnaise |
1/2 cup sugar |
3 tablespoons vinegar |
1/2 cup sunflower seeds or toasted slivered almonds |
Directions:
1. Use scissors to cut bacon into small pieces and fry till crisp 2. Drain on paper towels and set aside 3. If using almonds, toast them now and set aside 4. Cut broccoli into small florets, chop small stems and place in medium mixing bowl 5. Add chopped onion, chopped pepper, cheese and dried fruit 6. In small bowl mix mayo, sugar, and vinegar 7. Add to broccoli mix and stir well to combine 8. Add bacon and sunflower seeds or almonds and stir well. 9. Chill for at least one hour. |
