A wonderful medely of broccoli, veggies and fruit with a sweet and sour dressing. This is a pot-luck hit. (Lot's of work, but worth it). Ingredients:

1 c best foods/hellman's mayonnaise |
1/4 c canned milk |
1 t white vinegar |
1/4 c sugar |
salad |
1 large bunch of broccoli, chopped in bite size pieces (including the stalk - peel/slice or shred) |
1 large pot of boiling water |
6 green onions (scallions) from the bunch, chop in bite size pieces |
2 c celery, chop in bite size pieces |
2 c red seedless grapes – remove stems and wash |
1 c raisins |
1/2 lb bacon, cooked/drained/choped in small pieces |
1 c chopped pecans |
Directions:
1. Dressing: 2. (Do not add to salad until you are ready to serve). 3. Mix all ingredients until smooth. Cover and refrigerate. 4. Salad: 5. Place broccoli in a strainer; rinse. 6. Pour water over broccoli in strainer, then immediately run cold water over it to stop the cooking process (drain well). This step helps with the smell that's in broccoli and gives it a nice green color. 7. Add green onions, celery, and grapes. 8. Place all ingredients in a large plastic bag and shake to toss well, then refrigerate until ready to serve (I place paper towels in the bottom of the bag to catch the any moisture). 9. Just before serving add the raisins, bacon and pecans to the bag and toss. 10. When ready to serve, place the veggie mixture in a large serving bowl. 11. Pour dressing over all and toss. 12. Serves: 8-10 13. NOTE: Add dressing, raisins, bacon, nuts only to what will be eaten. Does not refrigerate well with dressing. The above will not keep their texture in moisture. |
