reduced fat broccoli salad...add more broccoli if you don't like such a thick sauce. i added 2 more cups to the original because i felt it was thick for 2 cups of broccoli Ingredients:
1/2 pound bacon |
4 cups broccoli florets |
1 cup reduced fat mayonnaise |
1 tbsp cider vinegar |
1/3 cup chopped onion |
1/4 cup splenda no calorie |
3/4 cup raisins |
1/2 cup sunflower seeds |
Directions:
1. cook bacon until crisp 2. set aside to cool 3. blanch broccoli in boiling salt water until green and a little soft, about 3 minutes 4. drain well and add cold water to stop the cooking process 5. drain well again 6. mix mayonnaise, vinegar, onion, sweetener and raisins 7. toss in broccoli until well coated 8. refrigerate for an hour 9. when ready to serve, stir in seeds 10. top your serving off with a few crumbled bacon pieces and toss the rest into the salad to garnish |
