Another variation of broccoli salad. Ingredients:
1 cup mayonnaise |
1/2 cup sugar |
2 tablespoons white vinegar |
1 teaspoon dijon mustard |
1/2 teaspoon paprika |
1/2 teaspoon pepper |
salt, to taste |
2 heads broccoli, washed and cut into bite sized flowerets |
1 cup chopped purple onion |
1 cup sliced mushrooms |
11 ounces mandarin oranges, drained |
1/2 cup cashew pieces |
1 cup cubed sharp cheddar cheese (can use mild cheddar or any cheese) |
Directions:
1. In a small bowl, whisk together all the dressing ingredients and set aside. 2. In a large mixing bowl toss together all the salad ingredients. 3. Pour dressing over salad and toss well to coat evenly. |
