I got this recipe from a co-worker many, many years ago. It is delicious! Ingredients:
2 tablespoons butter or 2 tablespoons olive oil |
1 small onion, chopped |
1/4 cup celery, chopped |
10 ounces broccoli, cooked and chopped |
10 ounces cream of chicken soup |
1 cup cheddar cheese, shredded |
1/4 cup mayonnaise |
2 eggs, beaten |
0.5 (16 ounce) package seasoned stuffing mix, seasoned, tossed with melted butter or 0.5 (16 ounce) package croutons, seasoned |
Directions:
1. Saute onion and celery in butter or oil until tender; about 10 minutes. 2. Add broccoli, soup, cheese and mayonnaise; stir to blend. 3. Fold in eggs. 4. Turn into buttered baking dish and bake uncovered at 350 for 45 minutes.. 5. Put croutons or stuffing mix on top and bake for an additional 10 minutes. 6. Let cool slightly before serving. |
