A great side dish. I changed the original recipe by adding some garlic.... of course. Ingredients:
1 (1-1/2 lb) bunch broccoli |
2 tbsp finely chopped shallots |
1/4 cup butter, melted |
1/4 cup soft breadcrumbs (i used progresso italian) |
1 hard cooked egg, sieved (sliced thin) |
2 tbsp chopped fresh parsley |
2 (optional) cloves garlic fine chopped or minced |
Directions:
1. Trim broccoli, remove large leaves and tough ends of lower stalks 2. Wash broccoli thoroughly and separate into spears. 3. Arrange broccoli in steaming rack with stalks to the center; place over boiling water, cover, and steam 5 to 15 minutes (depends on how well done you like them.... Note: check out Alton Brown broccoli episode ... he has a neat way to steam.) 4. Arrange broccoli spears in serving dish; keep warm. 5. Saute shallots in butter (add garlic here and saute if desired); add bread crumbs, stirring well. 6. Spoon mixture over broccoli, sprinkle with egg and parsley. 7. Serve immediately. |
