This is a light, fluffy, easy to make broccoli dish. It can be used as a side dish or as a main dish. Ingredients:
1 frozen deep pie shell |
1 cup frozen small chopped broccoli |
4 eggs unbeaten |
1 1 cup ricotta cheese |
3 tbl. flour |
1/2 lb. shredded cheddar cheese |
1 onion chopped |
3 tbl. butter, melted |
Directions:
1. Preheat oven to 350 degrees. Thaw broccoli by placing in a colander and running hot water over it. Drain well. Have all other ingredients at room temperature. In a mixing bowl beat broccoli, eggs, ricotta, flour, cheese, onion and butter. Pour into pie crust and bake 1 hr or until golden brown and knife inserted in the center comes out clean. |
