Delicious take on traditional pesto with a great creamy texture. Perfect with fusilli, bow ties, or hot baked French bread. Serve over grilled chicken too. DELICIOUS! Ingredients:
2 cups chopped broccoli florets |
2 cups chopped fresh basil |
1/4 cup extra-virgin olive oil |
1/4 cup shaved parmesan cheese |
1/4 cup pine nuts |
6 cloves garlic, peeled |
2 tablespoons vegetable broth, or more if needed |
1 pinch cayenne pepper |
salt and ground black pepper to taste |
Directions:
1. Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add broccoli, cover, and steam until tender, 3 to 5 minutes. 2. Blend steamed broccoli, basil, olive oil, Parmesan cheese, pine nuts, garlic, vegetable broth, cayenne pepper, salt, and black pepper in a blender until smooth and pourable. |
